Not only does this dish look pretty and colorful, but it tastes amazing. Pretty simple to make, and bound to impress!
Recipe is from OregonLive.com
Makes 4 servings
Salsa:
1 c diced (1/4-inch) fresh strawberries
1 yellow bell pepper, cut in small dice
1 jalapeño chile, cut in small dice
1 mango, cut in small dice
2 cloves garlic, minced
2 Tbsp lemon juice with 1/2 tsp granulated sugar
Tuna:
4 4-6 ounce ahi tuna steaks
salt and pepper
1 Tbsp olive oil
To make salsa: In a medium bowl, combine strawberries, yellow bell pepper, jalapeño, mango, and garlic. Add lemon juice and toss to coat all salsa ingredients. Set aside.
To make ahi tuna: Heat saute pan or grill pan over medium-high heat. Season fish with salt and pepper. Add oil to pan. Sear fish on each side until cooked as desired.
I added some lemon juice to the tuna before I seared them. The yellow pepper was almost too similar to the color of the mango that I used. I would maybe change to an orange pepper to add another color to the salsa. However, this was the first time I did anything with mango, so I can't be completely sure the mango was at the right ripeness!! It still tasted delicious though!
I paired this recipe with a Vinho Verde (a Portuguese white wine). They complemented each other very well.
