Whole-grain Pumpkin Muffins

These muffins are healthy without compromising taste. Recipe is from allrecipes.com, and has been modified by another healthy cook and then myself.

2 cups pumpkin
2 cups whole wheat flour
1 cup rolled oats
3/4 cup sugar
1 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon ground cloves
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice
1 teaspoon salt
2/3 cup applesauce
3 eggs

  • Mix dry ingredients in a medium mixing bowl.
  • Beat the pumpkin, applesauce, and eggs together in a large mixing bowl.
  • Gradually add the dry mixture to the pumpkin mixture.
  • Grease muffin cups or use liners.
  • Bake at 350 for about 20-25 mins.

Makes 24 muffins.
