Deep Dish Lasagna

Cooking for one person is hard. I always try to find ways to cook smaller portions, and this time I used a loaf pan to make a smaller lasagna, and it was perfect. I'd say it still made 3 or 4 pretty hearty servings.

8 lasagna noodles
1/2 lb. turkey sausage (I remove it from the casing)
about 2 cups of your favorite sauce
1 can diced tomatoes, drained
8 oz. ricotta cheese
about 3/4 cup shredded mozzarella, divided
1/4 cup parmesan cheese
a small handful chopped fresh parsley


  • Cook noodles according to package directions.

  • Brown sausage in large skillet over medium heat, breaking it up with a spoon. (Optional: season with some black pepper and oregano.) Remove from heat and place on a paper towel to soak up excess grease.

  • Heat the sauce and diced tomatoes together in the sausage pan until simmering. Add the sausage and heat through.

  • In small bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, the parmesan cheese, and parsley. Stir together.

  • Coat bottom of pan with some sauce. Layer noodles, cheese mixture, noodles, sauce mixture. Repeat. Top the last layer of sauce with the rest of the mozzarella cheese.

  • Cover with foil and bake for about 30 mins. at 375. Serve hot.
